Enterobacteriaceae

Enterobacteriaceae is the family of gram negative, facultative anaerobic rod-shaped bacteria that is the cause of the majority of food borne disease. This large family includes many harmless bacteria that form the flora in the body and environment but also includes pathogens like Salmonella, E. coli, Yersinia pestis, Kleibsiella, Shigella, proteus, Enterobacter, Serratia and Citrobacter. The type genus is Escherichia.

Occurrence of Enterobacteriaceae

This family of bacteria is found everywhere in soil, animals, plants from insects to humans. However, many species populate the gastro intestinal tract and are as such of considerable importance to the food industry. Most species are mobile and adhere to their hosts and produce entero toxins.
